Vanns Spice Blends and Rubs for Chicken Wings

    
One of the glories of spice rubs is that they are so easy to use. Delicious chicken wings are an example. Arrange the wings on a baking pan; we use the Stanco Broiler Pan. The excess fat drains into the pan below the grid and it is really easy to clean up. Simply sprinkle enough of a spice blend to cover one side of the wings, and then turn and do the same for the other side. You can let the wings sit for 1 hour to season more deeply, but it is not necessary. Bake at 350º for 30 minutes. If the wings are frozen, put in the oven at 375º for 10 minutes to soften the flesh, then sprinkle on the spice blends as directed and bake for 50 more minutes.

Of course you can grill the wings, which is a lot more work, but also more flavorful.

When we cook wings, we use a variety of blends. All of the following blends are really good:

Barbecue Rub
Cancun Rub
Caribbe Rub
Island Jerk
Poultry Seasoning

Thai Rub - For extra flavor, mix 1/2 teaspoon of fresh lemon juice per teaspoon of rub and then spread on the wings.
Tandoori Blend is also good.  Mix 3 tablespoons with 3 tablespoons of plain yogurt. 
Brush over wings and marinate for 1 hour, and bake as usual.

With regard to wings, I should mention that our son is the wings expert in our family. 
He uses the Vanns Rubs, but also uses Hidden Valley Ranch Dressing.  He bakes the wings for 10 minutes and then bastes one side with the dressing and sprinkles on a spice blend.  After baking for 10 more minutes, he turns them, bastes the other side and sprinkles on a spice blend.  He is particularly fond of the Barbecue Rub. Then, 10 minutes before the wings are done, re-bastes them with ranch dressing.  They are really delicious.

Festive Herb Dip

Now a dip for fresh vegetables, chips, or crackers to go with the wings.

Base of dip
1 cup of Ricotta cheese
1 cup of sour cream

Version 1: add
2 tablespoons of Vanns Herbs for Fish

Version 2: add
2 teaspoons of Vanns Lemon & Dill

After making the dips, grind in some sea salt to taste. It will bring out the flavors of the cheese and herbs. Also, the dips will have more flavor if let to sit for 1/2 hour for flavors to marry or made the day before and aged overnight in the refrigerator.
