Chicken in a Pot - A Bitar Family Favorite
This is a family favorite
because it is so easy to prepare, yet is delicious and nutritious.
Remove the giblets from a whole 4 to 6 pound
chicken. Place the chicken in a 4.5 or 5.5 quart Le Creuset Oven. Cover.
Put on a burner at low to medium low heat. Cook for an hour to an hour and a
half, till done. Defat the juices.
Serve with rice. Use the chicken juice as
a gravy. Add peas and salad for a no fuss meal.
Variations: place a few leaves of
tarragon or parsley in the chicken cavity. Add vegetables, such as carrots and
potatoes, to the pot with the chicken.
