Thai Paste for Chicken or Fish

Add 1/2 teaspoon lemon juice to each teaspoon of Thai Rub. Spread paste on chicken or fish using 1 teaspoon Thai rub per pound. Marinate 1 hour. Then grill, broil, or bake. Grind some sea salt over meat or fish before serving.
This is one of my favorite flavorings for chicken. I use boneless chicken breasts. The lemony-peppery flavor is really enjoyable.

Two Second Thai Salad

1 pound bay or sea scallops
1 teaspoon Thai Rub
1 cup broccoli flowerets, steamed
1 5-oz. Can bamboo shoots, drained
1/3 chapped scallions
1/2 cup freshly grated carrots

Dressing
1 tablespoon sesame oil
1 tablespoon soy sauce
1 teaspoon Thai rub

Season scallops with 1 teaspoon Thai Rub, and sauté or steam lightly, then grind some sea salt over them. Then toss all ingredients with dressing and serve on shredded spinach.
