Balsamic Mustard
Vinaigrette
Balsamic mustard
vinaigrette is delicious and easy to make. It is also a base for
additional vinaigrette flavors. You will enjoy making, serving,
and eating this tasty salad dressing.
1/4 cup good balsamic
vinegar condimento
1/2 cup extra virgin olive oil
a few grains of sea salt
1/2 finely chopped garlic clove
1/4 to 3/4 teaspoon Dijon mustard
(If you use super
market balsamic vinegar you might want to add up to 1 tablespoon
of sugar.)
Remove the skin from the
garlic clove and, with a paring knife, cut it lengthwise once or
twice and chop into little pieces. Put the balsamic vinegar and
olive oil in a small bowl; add the salt, chopped garlic, and mustard.
Whisk so all ingredients are blended. The mustard helps with the
emulsification. We spoon the vinaigrette over each salad because
tossing with a balsamic dressing coats the greens with a brownish
tinge, making the salad less attractive. Note: feta cheese
and balsamic vinaigrette makes a great taste combination. So add
a little feta to your salad!
Variation: For
citrus flavor, add 1 tablespoon of orange juice and some orange zest. |
