MAC knives are used and

MAC Knives are handmade in Japan by
skilled craftsmen. The blades have a high carbon content, .96 -
1.05%, with 14% chromium to attain a Rockwell hardness of 57 to 60 and
also be stain resistant. Molybdenum, vanadium, and tungsten are added to
complete the alloy so the blade will keep its sharpness for a long
period of time. The blades are thinner than European and American
knives, and the edge ground at a 15° angle to achieve an extremely
sharp knife that cuts effortlessly. The handles are wood
impregnated with plastic. They are warm to the touch and slip proof, but
not dishwasher safe. The Professional Series have heavy bolsters for
