Cake:
2/3 cup butter or margarine
1 3/4 cups sugar
2 eggs
1 tsp. vanilla extract
2 1/2 oz. unsweetened baking chocolate, melted (or 7 Tbs. cocoa plus 3 Tbs.
shortening)
2 1/2 cups sifted flour
1 1/4 tsp. baking soda
1/2 tsp. salt
1 1/4 cups ice water
Preheat
oven to 350. Cream together butter, sugar, eggs and vanilla until
fluffy (about 5 minutes at high speed on electric hand mixer) scraping
bowl occasionally. Blend in chocolate. Sift together flour,
baking soda and salt. Add to creamed mixture alternately with ice
water, beating well after each addition. Bake in two 9-inch round
cake pans for 30 - 35 minutes.
Frosting:
4 cups sifted confectioner's sugar
1/2 cup shortening
1/2 cup margarine or butter
2 tsp. vanilla extract
1 tsp. salt
Mix all together
adding a little milk as necessary to make a spreadable consistency. |
