Ingredients:
4 cups diced golden delicious apples
2 cups sugar
2 eggs
1/2 cup oil
2 tsp. vanilla
2 cups flour
1 1/2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

Mix apples and sugar and let stand.  Beat eggs well; add oil and vanilla. Sift dry ingredients and add to oil mixture, then add apple mixture.  Bake in a greased 13" x 9" rectangular pan at 350ºF for 50 minutes.
