3/4 cup butter (1 1/2 sticks)
2 eggs
1 cup sugar
1 cup sifted flour
1 teaspoon vanilla
Preheat oven to 450 degrees. Generously
butter and flour 24 madeleine molds. Melt 3/4 cup butter. Cool
to room temperature. Beat eggs in top of double boiler until
blended. Set eggs over boiling water.
Gradually add sugar, beating with a wooden spoon until mixture is
lukewarm. Remove from over water and continue beating until
cool. Blend in flour. Mix in melted butter and vanilla.
Spoon into prepared molds, filling 3/4 full. Bake until light
brown, about 9 minutes. Immediately remove from molds and cool
on racks before serving.
