Ingredients:
1 3/4 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 teaspoon nutmeg
1/4 tsp cinnamon
1/3 cup oil
3/4 cup sugar
1 egg
3/4 cup milk
Topping:
1/4 cup melted butter
1/2 cup sugar
1 tsp cinnamon
1/4 tsp nutmeg
In a bowl or sifter, combine flour, baking
powder, salt, nutmeg and cinnamon. In another bowl, thoroughly combine
oil, sugar, egg and milk. Add liquid ingredients to dry and stir
only to combine. Portion batter evenly among 12 buttered muffin
cups. Bake at 375 degrees for about 20 minutes, or until top of
muffins springs back when lightly pressed with finger. Meanwhile,
for the topping, combine sugar, cinnamon and nutmeg in a small bowl.
Remove muffins from tins and dip in melted butter, then in sugar cinnamon,
nutmeg mixture. Enjoy!
