Spinach Balls
Ingredients:
2-10 oz. boxes frozen chopped spinach, drained
2 cups herbed stuffing mix crumbs
2 medium onions, finely chopped
5 large eggs, beaten
3/4 cup melted butter
1/2 cup grated Parmesan cheese
1 Tbs. garlic salt
1 tsp. pepper
1/2 tsp. thyme
Cook
spinach according to package directions and drain well. Mix all ingredients and roll into balls about 1" in diameter, and place on cookie sheet.
If mixture is too soggy to work with, add more stuffing mix or
chill up to 2 hours in the refrigerator, then roll into balls.
Bake at 400º until firm, about 15 minutes.
To make ahead of time, freeze balls on
a cookie sheet
overnight, then store in plastic bags.
They can be placed from the frozen state directly into a hot 400º
oven, for 20 minutes.
Broccoli Bites
Ingredients:
2-10 oz packages frozen
chopped broccoli
2 cups herbed stuffing
mix
1 cup grated parmesan
cheese
6 eggs, beaten
1 1/2 sticks margarine,
softened
1/2 tsp salt
1/4 tsp
pepper
Cook broccoli according
to package instructions and drain well.
In a medium bowl, combine cooked broccoli, stuffing mix, cheese,
eggs, margarine, salt and pepper. Roll
into small balls, about 1" in diameter.
Freeze, well covered, for at least 3 hours.
Preheat oven to 350º. Place
frozen balls on lightly greased cookie sheet.
Bake until brown, about 15 minutes.
